Cup Notes: This Organic Guji has been a stand out as a Nordic style light roast. Nordic light roasts involve higher percentage of development of the beans' acids via Maillard reactions than some other light roast styles, meaning that the overwhelming vibrancy is mellowed out. Yet, with this process, we can keep the bright and powerful flavors present in your typical light roast. The fruit notes in this Guji are wonderfully balanced against tea and lemon notes, caried along with a great sweetness. It should be noted that this is not a "vibrant fruit forward" Ethiopian, but instead is an incredibly complex cup that has deep white grape, lemon, rose, and earl gray like notes. If you're wanting something that really "pops" in the cup, yet is balanced enough to be a daily drinker ,then this is a fantastic offering.
